Begin by heating the olive oil in a large, non-stick skillet over medium heat. Then add the diced potatoes and sprinkle them with a dash of salt and pepper. Now, cook the potatoes for about 10 to 12 minutes or until they begin to soften while stirring occasionally with a wooden spoon.

Next, add the chopped onions, red and green bell peppers, and ham to the skillet, and continue cooking for another 5 to 7 minutes or until the veggies are tender. You need to stir the mixture every few minutes to ensure even cooking.

Ingredients

  • 4 medium potatoes diced into 1 cm cubes
  • 1 medium onion chopped
  • 1 medium red bell pepper chopped
  • 1 medium green bell pepper chopped
  • 1 cup cooked ham diced into 1 cm cubes
  • 4 large eggs
  • 2 tablespoons olive oil
  • salt and pepper to taste
