If you don\u2019t have Italian seasoning you can use a mix of any of the above.<\/li>\n\n\n\n<li><strong>Olive Oil<\/strong> &#8211; You can substitute vegetable oil, sunflower oil, safflower oil or avocado oil.<\/li>\n\n\n\n<li><strong>Salt &amp; Pepper<\/strong> &#8211; To taste. <\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-for-mushrooms\">For Mushrooms<\/h4>\n\n\n\n<ul class=\"wp-block-list wp-block-list\">\n<li><strong>Butter<\/strong> &#8211; I used&nbsp;unsalted.<\/li>\n\n\n\n<li><strong>Mushrooms<\/strong> &#8211; I used cremini,&nbsp;cleaned and sliced. Pat dry the chicken thighs, then season with the dry rub on all sides.<\/li>\n\n\n\n<li><strong>Cook the Chicken<\/strong> &#8211; Heat olive oil over medium-high heat in a skillet then add the chicken thighs and sear on both sides until no longer pink. Transfer the chicken thighs to a plate.<\/li>\n\n\n\n<li><strong>Cook the Mushrooms<\/strong> &#8211; In the same skillet add the butter and melt. Add the sliced mushrooms, and saut\u00e9 until mushrooms soften and start to brown. Add the garlic, salt, pepper and stir together. Cook  until aromatic.<\/li>\n\n\n\n<li><strong>Finish and Serve<\/strong> &#8211; Return the chicken back to the skillet. Top each chicken thigh with mushrooms, garnish with fresh parsley. You can prep your chicken and mushrooms the night before and keep them separately in the fridge over night &#8211; Toss it in a skillet and there you have it! To reheat, you can pop it in the microwave or oven until it is heated through.
