Although it&#8217;s not vegetarian because of the parmesan cheese, it doesn&#8217;t have any meat, and yet it will absolutely fill you up. I have made it on the healthier side by baking the eggplant instead of deep frying it. The only difference is white onion may take a little longer to soften.<\/li>\n\n\n\n<li><strong>Garlic<\/strong> &#8211; Fresh, minced. Always adds great flavor!<\/li>\n\n\n\n<li><strong>Red Pepper Flakes<\/strong> &#8211; Adds the right amount of heat to the dish. Line a baking sheet with parchment paper.<\/li>\n\n\n\n<li><strong>Cook the eggplant:<\/strong>&nbsp;Toss the cubed eggplant with the olive oil, salt and pepper. Spread it in a single layer on the prepared baking sheet and roast for 25 minutes, flipping half way through.<\/li>\n\n\n\n<li><strong>Cook the pasta:<\/strong>&nbsp;Cook the pasta in a pot of salted boiling water according to package instructions, until al dente.<\/li>\n\n\n\n<li><strong>Make the sauce:&nbsp;<\/strong>In a large skillet heat the olive oil over medium heat. Add the chopped onion and cook for 3 minutes until soft and translucent. Stir in the minced garlic and cook for another 30 seconds until aromatic. Add the red pepper flakes, tomato sauce, Italian seasoning, salt and pepper to the skillet and stir. Bring to a boil, then simmer the sauce for 5 minutes on low heat.
