Of course, you can use chicken thighs as well if that&#8217;s what you prefer.<\/li><li><strong>Onions<\/strong> &#8211; You&#8217;ll want a large onion here because it will add lots of great flavor to our tomato and balsamic vinegar taste. Yellow onions are best because they are quite mild and caramelize easily.<\/li><li><strong>Herbs<\/strong> &#8211; I love using some dried oregano and basil. Of course fresh herbs work just as well. I also like to garnish the final dish with some fresh parsley for a pop of color.<\/li><li><strong>Balsamic Vinegar<\/strong> &#8211; I recommend going with a good quality balsamic vinegar here. This balsamic vinegar will give us a rich, complex sweetness with notes of molasses and chocolate. It&#8217;s really good and I wouldn&#8217;t substitute this with anything else.<\/li><li><strong>Diced Tomatoes<\/strong> &#8211; You&#8217;ll need a can of diced tomatoes. Season them with the garlic powder, salt and pepper.<\/li><li><strong>Cook the onion. <\/strong>Heat the olive oil in a large skillet over medium heat. Add the onion and cook for about 3 minutes or until browned, stirring occasionally. Transfer the onion to a plate.<\/li><li><strong>Sear the chicken. <\/strong>Add the chicken to the skillet and sear for about 4 to 5 minutes per side until browned.<\/li><li><strong>Braise the chicken. <\/strong>Top the chicken with the cooked onion, diced tomatoes, balsamic vinegar, oregano, basil. Bring to a boil, then reduce the heat to medium low and simmer covered for 20 minutes or until the chicken is cooked through.
