Recipe: Maryland Crab Soup

 

For this recipe, you will need:

  • 8 cups vegetable broth or stock (or you can use water)
  • 2 cups diced carrots
  • 2 cups chopped onion (or 1 large onion, any variety)
  • 1.5 cups chopped celery
  • 1 stick of salted butter
  • 2 tbsp. Old Bay seasoning
  • 1 tsp. Old Bay Hot seasoning (or cayenne pepper, or leave it out altogether for less spicy soup)
  • 1 tbsp worchestershire sauce (you can substitute soy sauce)
  • 3 cups diced potatoes (any kind is fine, but I use Yukon Golds)
  • 2 cups frozen corn
  • 1 large can crushed tomatoes
  • 2 pounds crabmeat, picked of shell

Bring the veggie stock to a boil in a large stockpot. Add the carrots, onions, celery, butter, Old Bay, Old Bay Hot, and worchestershire sauce; bring to a boil. Reduce heat and simmer for 30 minutes.

Add the potatoes and the corn and simmer for 30 minutes, stirring occasionally.

Add the crushed tomatoes and simmer for 10 minutes.

Add the crabmeat, stir gently.

Serve and enjoy!
